As of yesterday, the Smoker is in. Obviously, this is a bit more than we are used to in terms of size, but I think the fact that it's a side fire box style, it should be pretty straight forward to use. We'll see how true that assumption is on wednesday, when we start cooking ribs.
We ended up putting the bar on the side of the tent nearest the smoker. We did this to help with space and flow through the tent but also as a barricade for the smoker itself. Nobody but cooking crew folks need to be behind the bar much as the firebox will represent a significant burn hazard. don't anybody go getting drunk, wandering behind the bar and leaning against that sucker. You've been warned.
